Gluten-Free Leek Quiche

Looking for a gluten-free quiche crust recipe? Search no further and file this gem away for safe keeping, but don’t forget to share it with your friends first. No matter what the filling, this flavorful crust will be a welcome complement to any savory egg custard you can imagine. Using what is on hand this winter season, I wanted to combine the sweet taste of sautéed leeks and shallots with the more robust flavor of Roquefort bleu cheese. It is a match made in heaven.  This hearty vegetarian quiche will be the hit at your next brunch!

Vegan Recipe: Split Pea Soup

Nothing can warm your insides quite like a good bowl of split pea soup! The potatoes and carrots in this recipe create a hearty meal while the garlic, onion and seasonings blend with the peas for a rich and delicious flavor. You can also feel good about getting a large serving of veggies, since the peas alone have high levels of vitamins C, A and protein!

Cooking with Essential Oils 101: Rosemary Potatoes

Oh, the poor potato! Once a staple of many diets around the world, it has been unjustly maligned in recent years due to its starchiness, which lands it high on the glycemic index. In actuality this traditional food comes in degrees of starchiness depending on the variety, and also has a good amount of nutrients. There are documented reports of people living exclusively on potatoes for up to three years. In my mind, the worst thing about them is that they’re often ill-prepared, and what ends up on our plates is a soggy shadow of what a potato could be.

Gyoza Dumplings (Vegan)

Gyoza is a pan-fried dumpling from Japan, similar to pot-stickers, that commonly has a filling of protein, vegetables and spices. This recipe has been veganized by adding in some fried tofu instead of the traditional meat for the filling, but you could put any type of protein or flavor combinations that you like. The green onion, garlic and chili peppers give this recipe a traditional taste that goes well with your favorite teriyaki or soy dipping sauce.

Recipe: Chickpeas, Kale, and Tomato Stew

As the seasons change and the weather gets cooler, we start to crave more warming and nourishing foods. Unfortunately, the change in seasons also tends to bring more busyness to our lives - school functions, late hours, and holidays all colliding at the same time. It’s a double-edged sword -- craving the heaviness of winter foods while also unable to spend hours in the kitchen.

Vegan Pumpkin Pie Recipe

There is nothing quite like Pumpkin Pie; the rich earthiness of the pumpkin, the complex spices and the flaky crust are all classic elements that come together to create this delicious dessert. The almond milk adds some creaminess and the corn starch substitutes for eggs, giving the pie filling a thick consistency. I suggest topping your slice of vegan pumpkin pie with some whipped coconut cream for the full effect!

Vegan Baked Sweet Potato Fries

Try this healthier version of French fries! By baking the fries instead of frying them and using sweet potatoes instead of the classic white Russet potato, you can keep more of the nutrients and leave behind some of the extra calories and fats. The seasonings can be used as moderately or as generously as you like and feel free to try out your own flavors!

Sweet Potatoes

Olive Oil

Salt

Black Pepper

Garlic Powder

Paprika

Craving a cheesy sandwich? Try this simple and delicious panini! With just a few ingredients you can create a complex meal in minutes. The cool tomato, gooey cheese and slightly bitter spinach melt together with the balsamic vinegar and form a perfect balance of textures and flavors. I suggest using mozzarella-style cheese, but feel free to experiment with any of your favorite vegan slices.

2 slices of bread

3 leaves of spinach

2 slices tomato

4 slices of vegan cheese

Vegan butter
