Summer Recipe: Vegan Yogurt Pops

Vegan Yogurt Pops

Serves 8

Time to cool off with some fruity yogurt pops! Quick and easy, you can mostly use ingredients that you already have in the fridge. You can even use a cupcake pan if you have one laying around and don’t want to use paper cups. Feel free to experiment with various types of fruit for some fun colors and flavors that are sure to please on a hot summer day in the park or by the pool. 

Ingredients:

2 cups sliced strawberries

2 cups plain or vanilla non-dairy yogurt

2 tablespoons agave nectar (or your choice of sweetener)

8 small cups (or equivalent)

8 popsicle sticks

Instructions:

-Blend the strawberries along with the non-dairy yogurt and agave nectar until mixture becomes smooth.

-Fill the cups ¾ full with the mixture and stick in the freezer for about 1 hour.

-Once the mixture is solid enough, place a popsicle stick in the center of each cup.

-Place back in the freezer for at least 4 more hours and enjoy!
