Recipe: Grainless Cashew Butter Cookies

There are lots of reasons people choose to follow a grain-free diet. A diet low in grains is better for your gut (eliminating harmful saponins contained in the grain that can cause leaky gut), it reduces inflammation, and is ideal for those looking to reduce their sugar intake.

Recipe: Saucy Tempeh Curry

Tempeh is made of soybeans, just like tofu, but what makes tempeh special is the fermentation process that makes this meat alternative easier to digest -- making it a favorite amongst those with sensitive tummies!

Why All Vegans Should Be Eating Organic Sugar

If you only know sugar for its sweet reputation, you’re in for a rude awakening. For anyone who abstains from consuming animals and their byproducts, or may be easily grossed out, finding out that the tantalizing sweet stuff may not be suitable for strict vegans could come as quite a shock. Personally, accidentally discovering this tidbit of information about five years ago was definitely a doozy.

Vegan PB + J Mousse Bars

Ah, the humble PB and J. The sweet and peanut-y sandwich combination that continues to win the hearts of kindergarteners and adults alike. These days you can find peanut butter and jelly in everything, such as pancakes, cupcakes, ice cream, even poutine!

Vegan “Eggnog” Recipe

Warm up with this vegan version of the traditional holiday eggnog! Whether you enjoy it with alcohol or without, you are sure to be feeling festive as you sip on this creamy, sweet drink. The silken tofu acts as a thickener and the vanilla combines with a touch of cinnamon to spice things up.

Vegan “Eggnog” Recipe

 Serves 4

Ingredients:

21 ounces (2 packages) Silken Tofu

2 cups Almond Milk

2/3 cup Sugar

¼ teaspoon Salt

1 cup Cold Water

Vegan Pumpkin Mac and Cheese

If you haven't yet gotten your pumpkin on this season, this may be the recipe you've been waiting for! Who doesn't like mac and cheese on a chilly fall day – heck, who doesn't like mac and cheese any day of the week?!

Simple Vegan Stuffing Recipe

There is no turkey necessary for this simple, but tasty vegan stuffing recipe! Enjoy your holiday meal with a hearty bread stuffing that is sure to remind you of warmth, love and good memories this holiday season. I like using French bread because of its especially chewy crust and soft interior, but feel free to use any kind of sliced bread that you like. The onion and celery add a little bit of earthiness and a depth of flavor that the bread readily soaks up as you slowly bake it to crispiness in the oven.

Ingredients:

Vegan Baked Sweet Potato Fries

Try this healthier version of French fries! By baking the fries instead of frying them and using sweet potatoes instead of the classic white Russet potato, you can keep more of the nutrients and leave behind some of the extra calories and fats. The seasonings can be used as moderately or as generously as you like and feel free to try out your own flavors!

Ingredients:

Sweet Potatoes

Olive Oil

Salt

Black Pepper

Garlic Powder

Paprika

Directions:

-Preheat oven to 450 degrees Fahrenheit.

(Vegan) Lemon-Blueberry Pancakes

Blueberry pancakes are a classic that many of us grow up enjoying, but probably don’t make for ourselves very often. Revisit this delicious breakfast meal with a vegan twist! These pancakes are egg-less, thanks to a banana substitute which also adds a bit of natural sweetness, cutting out some of the sugar that would traditionally be used. The blueberries and lemon create a flavorful combination, with the lemon bringing out the slight tartness of the blueberries. Top the pancakes with powdered sugar, fruit or your favorite syrup!

Delicious Sweet Potato & Black Bean Dish

It is sweet potato season! This yummy recipe is one of my absolute favorites for fall and is a great complement to a meal with roasted chicken or turkey or as the main course in a vegetarian meal with a side salad. The combination of the sweetness of the potatoes and the savory flavor of the black beans with the added accent of the herbs used here is simply divine. Sweet potatoes are a wonderful source of Vitamins A and C and potassium, and they also help regulate our blood sugar and contain antioxidant and anti-inflammatory properties.
